Sausage Egg Muffins
8 Sausage Patties or Pre-Cooked Patties 1/3 c thin sliced Green Onion or 1/8 tsp Onion Powder 1/4 c chopped Red Pepper or 1/8 tsp Garlic Powder 2-3 Eggs 1/8 tsp Salt 1/8 tsp Pepper 1/2 c Cheddar Cheese, shredded 1 tube refrigerated Biscuit Dough |
Preheat oven to 350 degrees. In a skillet, cook sausage over med-high heat for 3 mins, chopping into small pieces. Or cut up pre-cooked patties and warm in a skillet. Add green onions and peppers. Cook and stir for 2-5 mins or until sausage is no longer pink. Drain and set aside. In a bowl, combine eggs, salt, and pepper. Stir in cheese and sausage mix. Separate dough into 10 biscuits. Press each into a 4-inch circle. Press into bottom and up the sides of greased muffin cups. Spoon sausage mix into cups and press down lightly. Bake 18-22 min or until filling is set. |
